Desert Fire: Dos Enchiladas- WASHINGTON


I had a business lunch at one of our local restaurants yesterday. Desert Fire Southwestern Grill is an upscale Tex-Mex place that sports really good food in a nice southwestern atmosphere. I thought Desert Fire was a chain because I could swear I have seen them in other locations, but when I look at their web site, I see only the one local one in Redmond, WA.


My lunch order was one of the specials, a smaller version of their "Signature Tres Enchiladas." The lunch special is just two of the enchiladas instead of three. The enchiladas are stuffed with chicken, mixed cheese, green onions and smothered in a three pepper sauce. They nicely draw some sour cream in a wavy pattern on top of the enchiladas and serve it with a small side of "Southwest slaw."


We also ordered the Southwest Spring Rolls and chips & salsa for appetizers, and they always serve you some breadsticks with a really yummy southwest cream cheese. After eating too much of the pre-lunch fare, I found I couldn't even finish both of the enchiladas and didn't even bother with the slaw. The enchiladas were excellent though -- the tortillas that hold everything in were thick but very soft and just melted away in my mouth. The chicken was flavorful and most and the sauce combined with the sour cream surrounding everything added even more flavor. If you like enchiladas, I highly recommend you try out Desert Fire, if there's one in your area.


I noticed on their menu that they have a Sunday brunch from 10am to 2pm, where you can get $1 mimosas and some pretty great looking breakfast items. I am definitely going to try to drag my family down there and maybe meet up with some friends for a Sunday brunch sometime soon.
